Tawa Pulav
This is a simple variety rice. It is a super easy to prepare and you will be a fan once you try!
When my SIL was pregnant, my mother a hired a cook to help with morning lunch. He used to prepare this regularly and that is where we were introduced to this recipe.
This is one of the best recipes with leftover rice and makes a delicious lunch box recipe too.

Ingredients
- 2 tsp oil
- 1 tsp cumin seeds
- 1 cup cooked rice Any variety. I have used sona masoori in this recipe
- 1 big tomato finely chopped
- 1 tsp ginger-garlic paste Optional
- 1 onion finely chopped
- 1 cup mixed vegetables chopped
- 1/4 tsp turmeric powder
- 1 tsp chili powder
- 1.5 tsp pav bhaji masala
- salt as per taste

Instructions
- Heat 2 tsp oil in pan. Add 1 tsp cumin seeds
- Once the cumin seeds splutter, add 1 onion (chopped). Sauté.
- Once the cumin seeds splutter, add 1 onion (chopped) and 1tsp ginger-garlic paste. Sauté.
- Now add 1 tomato (chopped), salt as per taste, 1/4 tsp turmeric powder, 1 tsp chili powder, 1.5 tsp pav bhaji masala. Mix well.
- Once the tomatoes turn slightly soft, add 1 cup of mixed vegetables of your choice (chopped). Sauté.
- Once the vegetables are cooked (about 4 minutes), turn off the flame.
- Now add 1 cup rice, cooked. Use any rice of your choice. I have used sona masoori. Mix gently.
- Tawa Pulav is ready! Garnish with some coriander leaves and sev! Enjoy with side of raita and lemon slice!
