Sabudana Vada

Sabudana Vada is a crispy and delicious snack that goes perfect with a nice hot cup of tea!

As weird as it sounds, this is a ‘lucky’ snack my mother used to prepare. Hear me out before you laugh at me…

I come from a superstitious family. My mother prepared Sabudana vada for the first time on the evening of a Cricket World Cup Finals, and India won. Ever since that an internal family tradition was set, Sabudana Vada to be prepared for an important day! My ACCA exam results day, the day before the license test… Sabudana Vada was prepared. Even if I may not believe, having Sabudana Vada doesn’t require a reason!

Instructions
  1. In a mixing bowl, add all the 3 boiled potato and mash.
  2. Add 1 cup sabudana (soaked 6 hours or overnight and drained). Mix well.
  3. Add 2 tbsp Maida/All purpose flour, 4-5 curry leaves, 4 green chili (finely chopped), 1 tsp sugar, ½ - ¾ cup peanut powder (coarse from roasted peanuts), 1 tsp chili powder and 1 1/2 tsp cumin powder, 1 1/2 tsp coriander powder and salt to taste.
  4. Finish of with juice of half lemon
  5. Oil your hand. Make lemon size ball and flatten. Repeat for remaining dough.
  6. Heat oil in pan at medium flame. Once oil is hot, drop the vada in. Do not crowd the kadai.
  7. Do not disturb the vadas till they firm up. Flip to ensure it cooks evenly.
  8. Sabudana vada is ready! So crispy outside! Serve with a side of sweet yogurt and enjoy!
