In a mixing bowl, add all the 3 boiled potato and mash.
Add 1 cup sabudana (soaked 6 hours or overnight and drained). Mix well.
Add 2 tbsp Maida/All purpose flour, 4-5 curry leaves, 4 green chili (finely chopped), 1 tsp sugar, ½ – ¾ cup peanut powder (coarse from roasted peanuts), 1 tsp chili powder and 1 1/2 tsp cumin powder, 1 1/2 tsp coriander powder and salt to taste.
Finish of with juice of half lemon
Oil your hand. Make lemon size ball and flatten. Repeat for remaining dough.
Heat oil in pan at medium flame. Once oil is hot, drop the vada in. Do not crowd the kadai.
Do not disturb the vadas till they firm up. Flip to ensure it cooks evenly.
Sabudana vada is ready! So crispy outside! Serve with a side of sweet yogurt and enjoy!
