Peri Peri Fries

I don’t know what is up with this COVID-19 quarantine, but apparently all the cravings rises only after 10pm on a weekday! My husband has been asking for fries for the past week and tonight he had his mind set on McDonalds Peri Peri fries that he used to have when he was working in Bangalore. He went into detailed description of the ‘crispy outside soft inside’ texture and most importantly the masala powder coating. I am not easily influenced by him, but he got me craving for an item I have never tasted before!

So, at 10:20pm we set out on a mission to have a go at these fries.  Mission Accomplished. All I have to say is, IT WAS ABSOLUTELY AMAZING! Also, it was ready in a jiffy! This is a must try recipe and perfect late-night snack!

I did a little research on this Peri Peri fries and here are the facts below…

The craze for McDonald’s Peri Peri (also spelled Piri Piri) fries in India started way back in 2013.

The McD fries are infused by a sachet of Peri Peri spice powder, shaken in the bag.

Peri Peri is a tweak of the word ‘piri piri’, of African Swahili origin meaning ‘pepper-pepper’. It’s a mix of many exotic spices.

So, let get right to making these amazing fries!

Instructions
  1. Wash 4 small potatoes and cut into thin fingers/ sticks. Keep the spice mix ready-1/4 tsp Coriander powder+1/4tsp Cumin Powder+1/4 tsp Chili Powder + Salt
  2. Take 4 cups water in a pan, add salt and bring to boil.
  3. Once the water comes to boil, add the potatoes sticks. Cover the pan and let it boil for 2-3 minutes.
  4. Drain the potatoes. Heat oil in kadai.
  5. In a mixing bowl, add the par boiled potatoes, add 1 tsp of rice flour and 1 tsp all purpose flour/maida. Mix gently and coat evenly
  6. Check if oil in hot. Add the potatoes in and fry till light gold. Fry in batches Occasionally, toss potatoes to ensure it cooks evenly
  7. Once they are light gold, remove them. Drain the fries on a paper towel to remove excess oil. Do same for next batch
  8. Add all the potatoes back into the kadai for 1minute flash fry in high heat. Drain the fries on a paper towel
  9. Take a mixing bowl, add the fries, spice mix and salt. Add more chili powder if you like more heat. Just shake shake shake!
  10. Your Peri Peri fries are ready!
