Idli Chilly Fry
One of the best ways to make use of left over Idlis!
This has been a rather busy weekend. Finally ran out of all groceries and had intense stocking to do!
One of my favorite activities for weekend is preparing a nice afternoon snack for my husband. He is my devoted lab rat and love experimenting on him! Jokes apart, he overworks during weekday and I love to pamper him during weekends. I ran out of all vegetable supply and had to make best with what was available in the fridge. I had Idlis left over from yesterday dinner and was just about to prepare Idli Upma, when I changed the direction. This is a quick snack and quite delicious!

Ingredients
- 8 Idli chopped/slice
- 1/4-1/2 cup garlic chopped
- 1 big onion chopped
- 4 green chili chopped
- Oil 2tsp
- 3 tbsp chopped coriander
- 1/2 cup water
- 1 tsp maida
- 3 tsp water
- 2 tbsp soy sauce
- 3 tbsp ketchup
- 2 tbsp Chili sauce
- 2 tsp white vinegar
- salt to taste

Instructions
- Heat oil in pan for frying and cut up 8 Idlis to desired shape
- Once oil is hot, fry the cut up Idlis in batches till golden brown.
- Fry both sides till golden brown
- Drain in paper towel.
- Repeat for all the remaining Idlis
- Heat 3 tsp oil in pan
- Once oil is hot, add 4 green chilis, 1/2 cup garlic (finely chopped). Sauté for few minutes
- In a cup prepare keep the sauce paste ready with 2 tbsp Soy Sauce, 3 tbsp Ketchup,2 tbsp Chili sauce, 2 tsp white vinegar and Salt to taste
- Add 1 big onion (chopped). Fry till onions turn light brown
- Once onion turns light brown, add the sauce paste. Adjust salt.
- Add half cup water and mix well. Then add maida paste (1 tsp maida & 3 tsp water)
- Top with 3tbsp chopped coriander. Add the fried Idlis and gently mix.
- Turn off flame. Idli Chilly Fry is ready!
