Eggless Almond Flour Cookies
These healthy and delicious cookies are inspiration from recipe of powerhungrycamilla and I have been obsessed since the first time I baked them.
These cookies are super easy to prepare and require minimum ingredients. Almond flour is more easily available these days, and I usually buy from Costco, because they a great deal and I love Costco!
The recipe is versatile, and you can play around with the additions and have fun! I have tried with Thumbprint and Jam, and also with chopped up roasted almonds, but our family favorite is white chocolate chips. The combination of white chocolate and almond flavor is incredible! I usually bake 2 cookies with no additions for Ms. Roxy, who loves freshly baked cookies straight out of the oven. The cookies are crisp outside and chewy inside, and lovely with a glass of milk!
So, lets get right to it!

- 2 cups almond flour 224 g
- 6 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 tablespoons water
- 1/2 cup chocolate chips optional
Ingredients

- Keep all ingredients ready.
- Preheat the oven to 350F (175C). Line a baking tray/sheet with parchment paper.
- In a mixing bowl, add the 2 cups almond flour, 6 tablespoons sugar, 1 teaspoon baking powder and 1/4 teaspoon salt. Mix thoroughly and break up lumps in flour.
- Slowly start adding the water little by little. Mix unit well incorporated. I used 4 tablespoons water.
- Now, finally add 1/2 cup chocolate chips and mix
- Scoop a lemon size ball and flatten slightly with your palm. Place them on the prepared baking sheet spacing each cookie apart.
- Bake in the preheated oven for 15 to 17 minutes until the edges are light brown and cookies are set at the center.
- Remove from the oven and let it remain on the baking tray/ sheet for 5-10 minutes till firm. Transfer cookies to a cooling rack and cool completely.
- Cookies are ready! Enjoy with a glass of milk or just like that!
