Dum tea/ Dum Ki Chai in Instant Pot
I love Tea and this recipe is super easy and delicious!
A Dum Tea has its origin from Hyderabad and is prepared in the same concept of Dum Biryani. It is boiled in a Handi for long time, letting all the flavors infuse in the tea. Some people add fresh cream or Khoya, to make the tea richer and milkier.
Today I prepared this tea in my Instant Pot and it turned out great!
Lets get right to it!
Notes:
- This measurements are perfect for 2 (mugs) servings of tea.
- If you want creamy rich milk, use evaporated milk. Some people add some khoya in addition to milk.
- Try and avoid too much fresh ginger. Too much tends to curdle the milk
- For a little more of a kick to the tea, I added additional ¼ tsp of my mother’s Sukku Malli coffee powder. Play with the flavors how you please!
- You can make in bulk for parties and pour in thermal flask for serving

Ingredients
- 1 cup water
- 1 +1/2 cup milk
- 3 tsp tea powder
- 3 tsp jaggery
- 2 pods cardamom
- 2 cloves
- 1/2 inch ginger chopped. Or use 1/2 tsp ginger
- 4 peppercorns crushed
- Lots of Love

Instructions
- Keep all the ingredients ready and lets get started!
- Fill the inner pot in Instant Pot with 2 cups of water
- Place a IP safe pot/bowl into the Instant Pot in a trivet. In the steel bowl, put in 1 cup water, 3 tsp tea powder, 2 cardamom(elaichi), 2 cloves, ½ inch ginger chopped or ½ tsp ginger powder, 4 crushed peppercorns, 3tsp jaggery and finally, 1 ½ cup milk. Mix well.
- Close the lid and set the vent to seal. Turn on the Pressure cooking/Manual setting. Let the tea cook in High pressure cook for 6 minutes
- Let the pressure ‘Natural release’ for 6 minutes. After that manual release the remaining steam.
- Hot Dum Tea is ready! Enjoy your teatime with biscuits or some namkeen!
