Butter Shortbread

inspired from Gemma’s Cookie recipe

We are well into the final quarter half of this roller coaster of a year. It has been wild so far, to say the least.

We do have Diwali, Thanksgiving, and year-end holidays coming up. The best time to make festive recipes and get ready for the season. To get into the feels of the festive season, we spent last weekend decorating the front porch with Diwali lights and decoration. We also prepared cookies and cakes over the weekend.


Today, I share with you one of the most simple recipes for an absolutely delicious and buttery shortbread. Shortbread is a traditional Scottish biscuit made with just butter, sugar, and flour.


I baked these cookies over the weekend and it was a super hit at home. My husband swore that these taste exactly like the Indian tea shop biscuits! They just melt in the mouth and are an incredible combination with a hot cup of tea or coffee! Do try this recipe and you can be innovative with the flavors and decoration!

Instructions
  1. Preheat your oven to 350 F and grease a baking tray or line with parchment paper.
  2. In a mixing bowl, whisk together butter 1 cup room temperature butter and 1/2 cup powdered sugar(packed), until they become light and fluffy
  3. Now add in 2 cups All-purpose flour. Transfer the dough to a surface dusted with powdered.
  4. Mix gently with hands. Do not over knead, just mix to get a non sticky soft.
  5. Gently roll the dough to a log. It okay if the cookies have little cracks.
  6. Now, using a cring/plastic wrap, roll and cover the dough.
  7. Place inside refrigerator for about 30 minutes to firm up.
  8. After about 30 minutes, take the roll out. Unwrap the roll and slice to 1/2 inch thickness.
  9. Place the sliced dough on to the baking sheet.
  10. Bake in the preheated oven for about 15-20 minutes or just until lightly golden. It took me 17 minutes.
  11. Once done, take out of over and let it cool for 10 minutes before transferring to cooking rack.
  12. Butter Shortbread is ready! Enjoy with a nice cup of tea of coffee!
