Aloo Tikki Burger

with Cilantro Cream Spread

Burger Burger Burger.

I was properly introduced to this super popular fast-food dish only after moving to the US. My husband got my first burger in the US from Habit Burger Grill. Surely tempting, but for an Indian Vegetarian, burger we choose are without mayo and must ensure no cross contamination. Hence, my husband and I are left with such limited options, which turns out to be dry sometimes.

There was never really a hype for this fast-food item back in Dubai. I believe the only time I had burger in Dubai, was when Mc Donald’s used to have Aloo Tikki option, and even that was short lived on the menu. In all fairness, there are so many fresh vegetarian food options near home, that I never really gave a good shot for burger or any fast-food for the matter. Only after my marriage and moving to the US, especially to Tracy, I have explored different cuisines and restaurants.

One person who I know would have genuinely appreciated this adventuresome attitude of mine would have surely been my best friend, Sharanya. I was spoiled with so many delicious options back in Dubai, that I became quite finicky with my food and I was hard to please. I remember I used to drive her insane during the process of choosing a restaurant to dine in. I cannot remember for us to have tried anything but Italian and even then, I turned into a Master Chef judge during our dinner dates. Although irritating her did bring its own sense of wicked joy for me, I do wish she were here to enjoy the new me!

Now that I have jogged down this bittersweet memory lane, let us proceed with the recipe!

Instructions
  1. Take 6 small (or 4 medium) Potatoes. Boil, mash and keep aside. Tip: Alternatively, you can chop up and microwave with a little water for 5-7 minutes.
  2. In a chopper, add 4 green chili, 1 handful coriander/cilantro, 1 inch ginger and 2 small cloves garlic. You may even finely chop by hand or even coarsely grind it.
  3. Add the chopped mixture to the mashed potato. Mix well.
  4. Add 1.5 tsp chat masala, salt and juice of 1/2 lemon/lime.
  5. Combine everything well. Taste and adjust salt as per preference. Tip: if the mixture doesn't hold well as a ball, keep inside the fridge for 15 minutes before making the patties.
  6. Mixture for Aloo Tikki patty is ready! Let us keep aside and prepare the Cilantro Cream Sauce.
  7. In a blender, add 1 handful coriander/cilantro, 1 clove garlic, 1 green chili , 1 tsp cumin powder and juice of 1/2 lime/lemon. Tip: You can add some jalapeno if you like more heat.
  8. Blend till nice and smooth.
  9. In a mixing bowl, take 3/4 cup sour cream. Add the blended cilantro mixture and salt. Mix Mix Mix.
  10. Cilantro Cream Spread is ready! This tastes similar to Cilanto Aioli, but without egg!
  11. Now let us prepare the burger patty!
  12. Super simple. Roll the potato mixture to a ball and flatten. Coat well with breadcrumbs. Place on hot griddle. Drizzle oil and roast both sides well. Alternatively, you may also shallow fry them in a kadai or a pan.
  13. Flip and cook well on both sides. Repeat for all the patties.
  14. In meanwhile, you can proceed to arranging the burger.
  15. On a well toasted warm bun, spread one side with Tomato Ketchup. Place the hot Aloo Tikki Patty, Cheese, Sliced onion, Lettuce and pickled radish (optional). On the other side of the toasted bun, spread the Cilantro Cream. Close the burger and place on warm griddle till ready to serve!
