Vegetable Au Gratin

This is a well-known French dish. The most famous vegetarian Gratin is Potatoes Au Gratin, but this vegetables version is also equally tasty.

The phrase au gratin literally means “by grating” in French, or “with a crust,” from the verb gratter, “to scrape, scratch, or grate.” When you cook a dish au gratin, you sprinkle it with breadcrumbs and brown the top in a hot oven. Some au gratin recipes also call for melted, browned cheese.

This recipe is super simple and you can play with the ingredients. You can add any vegetable you like and chopped in any way.

So, lets get right to it!

Notes:

  • Use vegetables with less water content, like carrot , beans, potato etc. Avoid eggplant, okra, onion etc.
  • I have toppped with cheese. You can use any kind of cheese. I haave use mozzerella cheese. You can cheddar, processed or any other cheese you prefer.
  • You can also make it little crisp crust by sprinkling some breadcrumbs.
  • If you want a golder brown top crust, broil for 2 minutes.

  1. This recipe needs 2 cups of chopped vegetables. You can use any vegetables you like. Try to use less water oozing vegetables, like beans, carrot, potato, broccoli. Try and avoid eggplant, okra etc.
  2. Steam the vegetables. Keep aside.
  3. Preheat the oven 400-degree Fahrenheit
  4. Heat 2tbsp butter in pan. Add 2tsp chopped garlic.
  5. Add 2tbsp all-purpose flour/ maida and sauté for 30 seconds. Now, add 2 cups milk and salt. Mix well to avoid lumps.
  6. Let the sauce boil. You will notice the sauce thicken. Add some pepper. Mix Mix Mix.
  7. Once sauce thickens (in about 5 minutes), add 1/4 cup heavy cream. This is optional, but it gives a nice creamy finish to this sauce. Check and adjust for salt after adding cream.

  9. Turn off flame. Add the steamed vegetables. Gently mix.
  10. Pour into a oven safe dish. Top with ¼ to ½ cup of cheese. You can use any type of cheese. Mozzarella has been used in this recipe
  11. Bake in the preheated oven at 400-degree Fahrenheit for 12 minutes.
  12. Voila! The Vegetable Au Gratin is ready! Enjoy this delightful warm dish with toasted garlic bread on the side!
