Nei Murukku

With lots of Indian Festivals coming in the second half of the year, I wanted to share festival snack recipes.

This Nei Murukku is my mother’s recipe and all credits go to her! She gave me e-guidance to prepare and these were a hit!

This requires minimal ingredients and a foolproof recipe! Any beginner can confidently attempt this recipe!

  1. In a deep pan, boil 1.5 cups water.
  2. Once water comes to boil add, 2.5 tbsp melted ghee, salt, sesame seeds and mix well.
  3. Turn off flame and add rice flour. Mix well and fast. The key is to get a non-sticky, yet moist mixture. You should be able to make a ball easily.

  5. Once the mixture is cool enough to touch, roll in tennis ball sizes and keep aside. Proceed to making the Murukku. Heat oil in pan for frying.
  6. Grease a zip lock bag, parchment paper or a banana leaf and press the murukku into spiral rounds.
  7. Test the oil by dropping a small bit in, it should sizzle up gradually and steadily. Once oil is hot, slide the Murukku into the oil.
  8. In 5 minutes, the sizzling noise would reduce and murukku turn light gold. Then, take it out and drain on paper towel to blot excess oil.
  9. Nei Murukku is ready! So crispy and just melts in the mouth.
Recipe Notes

1- You may need more water depending on the quality of the rice flour. You can add more water after you take the mixture from the heat, but ensure you add hot water.
2- You can flavor with hing or chili powder as you please. Just add them when the water is boiling in pan at the beginning
