Beans Paruppu Usli

Paruppu Usli or how I like to call it, ‘Pappusli’, is a simple South Indian vegetable side usually prepared with beans, cabbage, carrot or other non suculent indian vegetable. You can even try this with brussel sprouts, brocolli and asparagus. Still super yummy!

Paruppu usli goes well with Mor Kozhambu and also South Indian gravies like Vatha Kozhambu, Vendheya Kozhambu, Sambhar or Kootu.

  1. Wash and chops the beans. Steam the beans and keep aside. You may steam in whichever method is convinient for you. I used the 'Fresh Vegetables' setting in my microwave. Yuo can use a steamer or Instant Pot.
  2. Soak 1 cup toor dhal and the red chilis in 2 cups of boiling water for 30 minutes.
  3. Strain and pulse in mixer and keep aside. The texture can be the way you please. As per my mother's recipe is coarse texture.This gives nice tecture once we fully roast it. So you can grind as per your preference.
  4. Heat oil in pan. Add mustard seeds and let it splutter.
  5. Add the ground mixture, turmeric, asafetida, salt and saute. Add about 1/4 cup water, to let the pulses cook. Turn the flame to low. Close the lid and let remain for about 5 minutes. Open the lid in the middle to ensure the pulses are cooked evenly.
  6. Now add the beans. Saute . Check for salt and adjust accordingly. Close the lid and let it sit for 3 more minutes.
  7. Switch off flame. Parrupu Usli is ready! Enjoy it with hot rice and gravy!
